Steps to making Ogbono soup
- Cook all the meat you use until done with a pinch of salt, pepper, onion and broth. Chop the spinach and set aside. If you are using whole Ogbano seeds, grind them in a mortar or coffee grinder. If you are using pre-ground seeds, skip. When several meats are cooked, drain the liquid, but save a portion of the liquid to use to crush the ogbono soup.
- In another saucepan, add palm oil over low heat and add ogbono seeds. Mix the ogbano seeds and chop the lumps with a spoon. Stir until completely covered. Add the boiled veal broth and stir. Add the water and stir until the desired thickness. Bring to a boil, then reduce to low heat and cook for about 10 minutes, stirring occasionally.
- Add meat, powder, red pepper, crab. Taste the salt and add more if needed. If it is too thick, add a little water. Let it boil for about 10 minutes. Add the chopped spinach and cook for another 2 minutes or so. Your Ogbono soup is ready to serve!
- Note. You can replace spinach with zucchini leaves, cucumber leaves or bitter herbs, or if you prefer to completely discard the vegetables. When adding palm oil to the oil, make sure it is on low heat and be careful not to burn it.
