- Preheat the oven to 325 F.
- At the bottom of the pan pour 2 tablespoons first cold pressed olive oil.
- Put all the vegetables in a pan and grease with a thin layer of olive oil. Sprinkle with salt and pepper.
- Arrange a bay leaf on top. Cover the first 30 minutes of baking with a layer of parchment paper. Then remove the parchment paper and cook for another 30 minutes. Stir occasionally even for frying.
- Remove from the oven and discard all black beets and bay leaves. Peel a squash, grate it and squeeze the juice.
